Rosemary Liver Burgers

I made these Rosemary Liver Burgers that I found on paleomagazine.com. I halved the recipe because I have never eaten liver before, and I was thinking I may not like it. I was pleasantly surprised. I absolutely love the flavor of these burgers. Working with liver on the other hand was not very fun. It’s slimy and gross looking. But it’s so incredibly good for you so I was hoping to find a way to work it into my diet… and now I have!

We often buy a quarter of a grass fed cow from a local farmer. We get the liver when we buy it, so I am super excited to make this a part of our regular meal roatation.

I did tweak it a smidge in that I halved the recipe and I added 1/4 tsp of sea salt. I figured it couldn’t hurt to add a bit of salt right?

The kiddos and I ate them for lunch and they were a success! Both kids loved them.

Then I grilled one up for the hubs after his softball game (the real test). I didn’t tell him they had liver in them at first. He said “These have really good flavor!” Then I told him they had liver in them and he goes “Oh….” like I had tricked him into eating something gross and healthy. I then asked him if he didn’t like them now that he knew they had liver in them. He then told me they were still good and happily finished his burger. So, I would say they passed the test.

Here is my burger. I added a little Annie’s Organic Yellow Mustard (my new favorite mustard-no GMOs!) *

I cooked our burgers on our cast iron on the stove (about 4 minutes each side). If you would like yours less rare you may want to cook yours longer.

Don’t let the liver scare you. These are really good!

    The memories I have from eating liver growing up are not pleasant. But maybe there is hope??? Thanks for sharing. If the kids like it then it might just be worth a try…lol!

      haha, yes, my dad used to tease me when I was little. He would say “I bought ice-cream!” and when we would cheer he would tell us it was liver and onions flavored. I’m not sure why he found such joy in tormenting us. haha I had never actually tried liver before this but I was afraid of it because of the ice-cream teasing I “endured” as a child.
