Faux Parmesan Garlic Roasted Chickpeas
Roasted chickpeas are a favorite snack for my kiddos. Usually I just sprinkle them with sea salt but I decided to try a new flavor and it was a hit.
Here is how I make this dairy free treat taste like garlic parmesan. I used the same seasoning from my banana chips (so if you them you might like these).
Ingredients:
- 1 can of organic chickpeas (garbanzo beans) with nothing added
- 2-3 tsp avocado oil (Be careful where you buy your avocado oil. We get Marriane’s from Costoc that isn’t cut with cheap oils from Costco. Chosen is another quality brand)
- 2 tsp organic apple cider vinegar
- 1 TBS nutritional yeast
- 1 tsp sea salt plus more for sprinkling. We buy our Redmonds Real Sea Salt at Thrive Market.
- 1/8 tsp garlic powder
- 1/8 tsp basil
- 1/8 tsp oregano
- sprinkle rosemary (crushed)
- sprinkle of black pepper
- sprinkle of onion powder
Directions:
- Preheat your oven to 450 degrees.
- Drain and rinse a can of chickpeas in a colender. Then throw them into a medium sized bowl.
- Add your avocado oil and mix it evenly with your hands until it coats all the chickpeas
- Add organic apple cider vinegar and all your other seasonings (nutritional yeast, 1 tsp sea salt, garlic powder, onion powder, basil, oregano, crushed rosemary and black pepper).
- Mix until your chickpeas are evenly coated with all the seasonings.
- Spread evenly on a baking sheet.
- Sprinkle more sea salt over the top and pop them in the oven for 10-20 minutes.
- After 10 minutes take them out and toss them with a spatula and cook for additional time if they aren’t nice and crunchy yet.
- Cook until golden brown and crunchy. You won’t want to burn them but the brown ones are extra crispy and yummy.
Caution: Allow to cool a bit before eating as they will be VERY hot straight out of the oven.

You will want to store these in an air tight glass container in the fridge. My kiddos typically eat the whole batch in one setting so I’m not sure how long they keep. š I wouldn’t store them more than 3 days typically.
