My Workout and What I Ate on Vacation Today

Hello from Dahlonega Georgia!

I’m here with the kiddos visiting family. My parents are in grandkiddo heaven since they have all three grandkids visiting (2 from my husband and me and 1 from my brother and his wife). I’ve had a pretty intense workout schedule lately so this week has been a welcomed break. I’ve been hiking a lot and playing with the kiddos for the most part.

Today I did get in a core workout while my mom rode her trainer indoors. It was a rainy day today so she chose to get a ride done indoors. She’s a biking Rockstar. She broke her hand and ribs while racing in Italy and still finished the race. Now she’s recovering from her injuries back in the states… but still going strong.

I did one of my favorite core routines “Clutch Life Core” and added some lower back calisthenics to the mix as well (variations of superman exercises).

While on vacation my food choices and timing varies a lot more than at home. I slept in after a late night and didn’t eat breakfast right away. Around 11am I had my usual breakfast of oatmeal with berries, chia seeds, and cinnamon as well as eggs with spinach and salsa. On vaca my go to indulgence in cheese! So I added a couple slices of fresh mozzarella and munched on some veggies (carrot sticks and cauliflower) as well.

Since I had a larger breakfast than normal and only had a quick workout I didn’t eat as often as usual.

Later in the afternoon I snacked on some 90% dark chocolate and a small handful of macadamia nuts while the kiddos ate and played at Chick-Fil-A. We got their energy out at the indoor park and they had tons of fun. We then visited a really neat “gold mining” place where the kiddos learned how to pan for gold and looked for gems. They had a blast!

When we got home I made dinner for the family. The family requested curry chicken. I made it without coconut aminos since we didn’t have any here and it was as delicious as ever. I made a bunch of white rice too. I ate mine without rice. I had a bowl and a half. It was very filling… and delicious! I took the week off lifting so my diet is higher fat and lower carbs than usual. I find that I don’t need or crave as many carbs when I’m not lifting heavy.

I had plans to eat some Greek Yogurt and peanut butter for dessert but staying up late every night was catching up with me so I went to bed early. So I’ll save my “dessert” for another day. I still have 3 days left of vacation and I’m loving the warmer fall weather here in Northern Georgia!

My vacation go to snacks are: Nick Sticks, Greek Yogurt and peanut butter, dark chocolate, cheese and healthy nuts. SO good. I like to have healthy treats that I LOVE so that I can stick to my health goals but still feel like I’m indulging in some favorite foods. I often make a Thrive Market order before trips so that I have plenty of snacks and treats that I love.
