Beef and Potato Hash Bake

I was at a loss as to what I should cook for dinner. I basically had ground beef (I always have this on hand), and potatoes. That’s it!

I hadn’t planned dinner for the night and while I had plenty of time to make it I didn’t have time to rush to the store for extra ingredients. So I thought “Meat and potatoes it is!”

I had planned on cubing and roasting the potatoes, then mixing it with ground beef afterwards which would have been an extra step. My daughter was actually the one who suggested that we shred the potatoes “like Franma makes potatoes for breakfast!” and I just went with it. It was SO much easier and really good. I was also able to bake everything in one Pyrex dish… making it less complicated and making for less clean up. After adding sea salt, pepper, garlic and smoked paprika we ended up with a meal that pleased the whole family. I also had some canned organic french cut green beans on hand which went perfect with this quick throw together meal. My hubby ended up mixing the green beans in like a casserole and my kiddos ate them separate because…. they are kids and everything must be separate. It’s a miracle they were happy with the meat and potatoes being mixed. 😉

Here is how I made my super easy Beef and Potato Hash. I highly recommend the French cut green beans either on the side or mixed. It’s a good combo. Otherwise I would make a big giant side salad. Yum!

Ingredients:

Directions:

  1. Preheat your oven to 400 degrees.
  2. Take out a large glass pyrex casserole dish and line with parchment paper.
  3. Wash your potatoes.
  4. Use a food processor (or grater) to grate your potatoes.
  5. Rinse the potatoes in a colander in cold water and drain the water.
  6. Pat the potatoes dry with a towel and place them in the lined pyrex dish.
  7. Add 1-2 TBS melted coconut oil to the potato hash and mix (I use my hands to get all the potatoes coated evenly.
  8. Brown a pound of grass fed ground beef in a pan on the stove over medium/high heat.
  9. Spread out ground beef evenly over potatoes in the Pyrex dish.
  10. Sprinkle desired amount (about half of what you plan to use) of sea salt, pepper, garlic, and smoked paprika over the entire dish.
  11. Mix the potatoes and beef together.
  12. Sprinkle more sea salt, pepper, garlic powder, and paprika over the mixed dish.
  13. Place your dish in your preheated oven.
  14. Cook for 40-60 minutes (checking occasionally to see if the potatoes are golden brown and cooked completely).
  15. Serve with a side of veggies if you like. I mentioned before that this goes really well with our favorite canned organic French cut green beans. We buy them at Target. I try not to do too many canned foods due to the BPAs and other possible chemicals in the cans but I like to have some on hand when I’m in a pinch. To me canned veggies are better than no veggies.
