Egg Noodle and Beef Bake

I think that most of my recipes start out with me needing to go grocery shopping and deciding to get creative with what I have on hand. We almost always have grass-fed beef in the freezer so I knew I was going to start with that. I then found some organic egg noodles I had bought at Natural Grocers when they were on sale one week. My hubby had once mentioned that my “lamb bake” tasted like the seasoning from tatter tot casserole (which is one of his ultimate comfort foods that I haven’t made in eons). I decided to use those spices to flavor my dish since I also had frozen green beans as well (an ingredient in his beloved tater tot meal).

The hubby was happy with a change from our usual meals and the kiddos said they liked everything but the green beans but they ate it all with smiles on their face so I considered that a win.

Here is how I made my “Egg Noodle and Beef Bake”:

Ingredients:

  • 1 lb grass fed beef
  • 2-3 cups frozen green beans
  • 1 TBS grass fed salted butter
  • 1 TBS coconut oil
  • 3 TBS of full fat coconut milk (from the can: check ingredients to make sure it’s JUST coconut and water. I get mine from Trader Joes)
  • 1/2 cup chicken bone broth (you could also use beef broth)
    1 tsp plus more sea salt (to taste) We buy our Redmonds Real Sea Salt from Thrive Market.
  • 1/2 tsp ground black pepper
  • 3 cloves of garlic
  • 1/2 tsp dried onion (you could use fresh but this is what I had on hand)
  • 1 tsp thyme
  • 1/2 tsp rosemary

Directions:

  1. Preheat your oven to 400 degrees.
  2. In a medium size pan add 1 TBS coconut oil, and green beans. Cook these on med/high heat for a bit then add onions and garlic. Be careful not to burn the garlic and onion (I add them in towards the end so not to burn them). Cook till done but not totally mushy-they will cook more in the oven.
  3. Set the green beans aside.
  4. Use the same pan to brown your ground beef. Once it’s browned add the green beans, 1/2 tsp black pepper, 1 tsp thyme, 1/2 tsp rosemary, 1 tsp salt, 1/4 cup bone broth and mix.
  5. Take the pan off the burner to cook your egg noodles.
  6. In a large pot boil egg noodles according to the package directions.
  7. Drain all the water from your egg noodles and put them back into the pot.
  8. Add all the other cooked ingredients (seasoned beef and green beans) to the pot of noodles and mix together.
  9. Pour the entire contents of the pot into a large glass Pyrex dish and put into the preheated oven.
  10. Bake 15-20 minutes (the kiddos liked how some of the noodles crisped up when I had mine in for 20 minutes).
  11. Let the dish cool for 5 minutes before serving. Be careful as it will be hot.
  12. Enjoy!
