Fried “Riced Cauliflower”: A Low Carb Girl’s Dream Come True

It’s almost impossible to ignore all the cauliflower recipes on every health blog these days. And while my taste buds would agree that cauliflower crust pizza is in fact delicious, my stomach wasn’t a fan of the gassy veggies and mucho cheese combo. Cauliflower and cheese together in one dish left me feeling bloated beyond what I thought was humanly possible. So you can’t blame me for being hesitant to try my hand at creating any dish that consists primarily of cauliflower.

This dish is cheese free so I decided to play around with some ingredients and give Fried “Riced Cauliflower” a try. Plus, my inner “chubby college girl self” was craving some fried rice. I used to eat loads and loads of fried rice from the Chinese place that was less than a block from my place back in the day. Flash forward to today and I don’t think I could handle all the soy sauce and cheap oil in traditional fried rice. But this revamped recipe took me back to “the good old days” when fried rice was an anytime meal and sometimes a girl just craves Chinese. You may have your doubts about cauliflower replacing white rice but even my hubby said it tastes a LOT like the real deal.

I’m not afraid of carbs (especially after a good leg workout), but I do have “lower carb days” when I don’t need all the extra carbohydrates. This recipe is made with whole quality foods that my body will thank me for later. I can eat away knowing I will be skipping the Chinese food “why did I think I should have eaten that” hangover that usually occurs soon after some not so wonderful food choices.

The boy loved this recipe as well. My daughter is the only one who vetoed it but she hates eggs so she would veto any fried rice. Here is how I made this fantastic Fried Riced Cauliflower.

Ingredients:

  • About 24 ounces or about 6 generous cups of riced cauliflower

You can use pre riced cauliflower (like I did thanks to Costco). Or you can chop up some cauliflower in the food processor. The latter is probably cheaper in most cases but the bag I found at Costco wasn’t too expensive so I went with that. I used 1 and 1/2 of the smaller 16 ounce bags inside the big bag.

  • 1/2 cup of frozen peas
  • 4 tsp of dried onion or a small fresh onion chopped
  • 3 cloves of garlic- minced (my cloves were mondo big so you might want to use 4 if they are smaller)
  • 1/2 cup of coconut aminos: I buy mine at Thrive Market
  • 1 TBS coconut oil
  • 1 TBS unsalted butter (divided) from grass fed cows (I used Kerrygold) You could use salted but then use less or no salt later depending on how salty you want this dish to be
  • 3 farm fresh eggs
  • Redmonds Real Sea Salt to taste. I buy mine at Thrive Market

Directions

  1. Add your coconut oil to a big wok and preheat it at medium heat.
  2. Add chopped onion, minced garlic, and peas. Cook until peas are tender. Be sure not to burn the garlic (as it burns easily).
  3. Set the peas and garlic onion mixture to the side.
  4. Add 1/2 TBS of the butter to the wok. While waiting for the butter to melt. Crack 3 eggs in a small bowl and whisk gently then add them to the melted butter. Cook the eggs until they are scrambled and fluffy but not overdone then set aside with the peas.
  5. Add the last 1/2 TBS of butter to the wok and turn the burner to med/high heat.
  6. Add your riced cauliflower and coconut aminos to the pan as well as a little sea salt and cook the cauliflower until tender (so it’s not crunchy).
  7. When the cauliflower is cooked through, add the eggs, cooked peas, garlic and onions back into the wok. Mix well.
  8. Taste your fried rice and add some more sea salt if needed.

Voila! It’s done.

I added a little cayenne pepper to mine for a little spice.

I also cooked up some sticky rice in the Instant Pot for my hubby and kids. The kids LOVE white rice and my husband was going to be famished after his workout that night so he needed some extra carbs. I also fried up a couple eggs to top off my hubby’s dish and give him a little more protein after his workout. He thought it was a great combo with the runny yolk from the fried egg. Good stuff!

There you have it! Fried Riced Cauliflower. A super simple meal that was surprisingly filling. It’s loaded with healthy fats, protein and veggies. You could eat this for a snack, lunch, or dinner.
